The Emporium’s Fresh New Menu
The Emporium’s menu in Fort Collins, Colorado, has a fresh new take focusing on seasonal vegetables and produce. One of the notable items, which is perfect for a light lunch, is the new Green Goddess Salad, featuring raw, shaved asparagus and a savory dressing full of garlic and herbs. This same dressing appears beside dijon mustard as a phenomenal dip to accompany our seasonal Crudité a beautiful arrangement of vegetables currently featuring radishes, cherry tomatoes, snap peas, and more.
At dinner service, order the Roasted Beet Salad with house-made crackers created with a mixture of seeds. The crackers are held together using soaked chia seeds, with the mixture spread into a thin layer and baked.
