Mixologist, Kate Clas starts by infusing wintery vegetables such as Roma tomatoes, plum tomatoes, pearl onions, jalapenos, and tomatillos into vodka. She lets the vodka, vegetables, and three tomatoes marinate for one week. The vodka is spicy, sweet and mixes nicely.
