IT’S BACK… DEPARTURE’S PEKING DUCK MONTH!
Join us this December for Departure’s annual holiday tradition- Peking Duck Dinner!
Featuring whole roasted duck- including traditional Mandarin pancakes, fried rice- complete with duck trimmings, and house made duck broth to kick off the evening. Our Peking Duck offerings will be served with all the traditional garnishes: cucumbers, scallions, picked kumquats and our signature plum and hoisin sauce.
The signature Departure Peking Duck process begins with curing the duck in 7 spice, salt and sugar overnight. The duck is then dipped in a blanching liquid of Shaoxing wine, honey, salt and 7 spice. The whole duck then hangs for twenty-four hours to dry the skin and concentrate the flavor. Finally, the duck is roasted for about an hour and flash fried to order. Chef presents the whole duck to your table before bringing it back to the kitchen to be carved.
Available for $99, only during the month of December- one duck serves 2-4 guests.
