The Art of Pizza, Spanish Style

With Thanksgiving happening this very week you would think we would be sharing something  turkey-related or deliciously focused desserts, but I think we would be doing a disservice to you if we didn’t share one of our favorite menu items. Authentic Spanish “Coca”! It’s one of the most popular dishes in Spain, a specialty of Catalonia in fact. What’s better is how easy it is to make. Tender yeasted dough, pita-like, they are rolled flat & topped with deliciousness. Cocas can be topped with just about anything sweet or savory, whether mushrooms or spinach, olives or anchovies, ham, bacon, tomatoes or even a combination of onion & honey. They are generally grabbed by the slice at bakeries that serve them for a quick lunch or snack.
